Our journey concludes in the Appalachians with Salmon Burgers. Preparing salmon burgers involves managing delicate, high-moisture proteins. Participants will improve binding techniques using ingredients like egg or mayo and master quick-cooking methods to keep the fish moist. Balancing rich flavors with citrus and herbs, handle canned versus fresh fish and use chilling to prevent patties from falling apart will be taught. 

Chef Curtis Brown is a seasoned culinary professional with 20 of experience in the restaurant industry, having worked both front of the house and back. With expertise in menu development, team leadership and culinary innovation, he has honed his skills in diverse kitchen environments. Throughout his career, Brown has demonstrated a passion for delivering exceptional dining experiences and fostering a positive kitchen culture.
